Mix this up the night before and you’ll have breakfast ready to go in the morning. It also makes a satisfying snack. The mixture keeps in the fridge for 2-3 days, just give it a stir before serving. For a dairy-free version use coconut yoghurt.

Method

Mix all the bircher base ingredients apart from the yoghurt and apple together in a bowl or divide between two jam jars, screw the lids on tightly and shake thoroughly to combine. Leave in the fridge overnight.

To serve, stir in the 2 tablespoons of yoghurt and the grated apple, if using. Either spoon into bowls, or leave the bircher muesli in the jam jars. Top with fresh berries, a drizzle of honey and a spoonful of extra yoghurt.
